1 cup of butter, softened
1 cup of sugar
1 cup of powdered sugar
2 eggs, beaten
1 teaspoon of salt
1 cup vegetable oil
2 teaspoons of vanilla
4 cups plus 4 tablespoons of all-purpose flour
1 teaspoon of baking soda
1 teaspoon of cream of tartar
Cream the butter and sugar together
Next add the eggs and salt and beat well.
While beating, add in the oil and vanilla.
Sift the dry ingredients together and mix in with the wet ingredients Make a soft dough.
Drop about 1 teaspoon of the dough onto an ungreased cookie sheet.
Oil the bottom of a large glass and dip into sugar.
Flatten each cookie on the sheet.
(Dip bottom of glass into the sugar before each cookie is flattened - You do not need to oil the glass again after the first cookie is flattened)
Bake at 350 deg. F for about 8 minutes
makes 7 dozen
