Toasted Coconut Custard Pie

From Martha George - served at the 2004 singing at Calvary in Fletcher.

makes one pie

3 eggs - beaten
1 1/2 cups sugar
1 stick margarine - melted
1 teaspoon vanilla
4 teaspoons of lemon juice
one 3 1/2 oz. can of flaked coconut
1 unbaked 9 inch pie crust

Mix thoroughly and bake in moderate oven (350 F) for 40 to 45 minutes.
To test, insert blade point of a butter knife into custard (between pie center and edge). If the blade comes out clean, custard is done.
