4 medium sweet potatoes
3 eggs, beaten
1/2 cup milk
1 stick butter or margarine
1 tsp vanilla
1/2 cup (or more) pecans
2 1/2 Tb butter, melted
1/2 cup brown sugar
Boil potatoes in salted water 'til soft (about 1 hour).
Remove skins. Mash potatoes.
Melt butter and add to potatoes, then add eggs, milk, and vanilla.
Mix well and place in greased casserole dish.
Mix topping and spread over potatoes.
Bake at 350° F for 30-35 minutes.
