Ginger Cookies
Hollingsworth's Christian Harmony singing and the Social Harp singing, February 2009
This makes *lots* of little bitty cookies - this is half of the recipe I started with. :)
1 1/2 cups plain flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
2 1/2 teaspoons ground ginger
3/4 cup softened butter and margarine (I use 1 stick margarine, 1/2 stick
butter)
1 cup sugar
1 egg
1/4 cup light molasses
In a medium bowl, mix well the flour, soda, cinnamon, cloves, ginger
In a larger bowl, cream the butter, margarine, sugar, egg, molasses
Add the flour mixture to the butter mixture, a bit at a time
Put little bitty spoonfulls on ungreased cookie sheet
Bake 350F for under 10 minutes - burns easily
Cool on wax paper.
I do not sift the flour and am rather lax about that measurement, just each half cup is somewhat scant.
