Old English Cheese Soup

3/4 cup butter or margarine, divided

1/2 cup finely chopped celery

1/2 cup finely chopped carrot

1/2 cup finely chopped onion

1/2 cup finely chopped green pepper

6 Tbs all-purpose flour

4 cups whole milk

1 tsp salt

1/2 lb or 2 cups of shredded sharp pasteurized process American cheese

2 cups clear chicken broth

Melt 1/4 cup butter in a skillet; add vegetables, and saute until crisp-tender. Set aside.

Melt 1/2 cup butter in a Dutch oven over low heat. Gradually stir in flour; cook, stirring constantly, until bubbly. Gradually stir in milk; cook, sturring constantly, until mixture is smooth and thickened. Add sauteed vegetebles, salt, cheese, and broth; cook, stirring frequently, until cheese melts and mixture is well heated. Yield: 6 servings. Martha uses Old English cheese slices
